Summer is calling, and there’s nothing better than hitting the trails or camping under the stars. Whether you’re planning a multi-day hike or a quick picnic in the park, one thing’s for sure: adventure is always better with good food. 

That’s why we teamed up with Two Raw Sisters to create the ultimate snack for your summer adventures - Cranberry + Chocolate Muesli Bars. They’re simple, wholesome, and packed with energy to keep you moving, whether you’re hiking or chasing the kids around the campsite.

They’re perfect for stashing in your Trailhead Pack (our go-to for day hikes and summer outings) or popping into a lunchbox for a little extra goodness on the go. 

 

The Recipe 

Serves: 12 
Time: 15 minutes 

Ingredients

  • 1 ½ cups rolled oats 
  • ½ cup dried coconut 
  • ¼ cup sunflower seeds 
  • ¼ cup pumpkin seeds 
  • 1 cup dried dates (soaked in boiling water for 5 minutes, then drained) 
  • 4 tbsp coconut oil (melted) 
  • 1 tbsp tahini 
  • 1 tsp vanilla bean extract or paste 
  • ½ tsp sea salt 
  • ¼ cup dried cranberries 
  • ¼ cup pumpkin seeds 
  • 80g dark chocolate (chopped into chunks) 

 

Method

  1. Blend oats, coconut, sunflower seeds, and pumpkin seeds into a fine flour. 
  2. Add soaked dates, coconut oil, tahini, vanilla, and salt. Blend until a cookie dough consistency forms. 
  3. Stir in cranberries, pumpkin seeds, and chocolate chunks. 
  4. Press into a lined tin, smooth the top, and freeze for at least 2 hours. 
  5. Slice into bars and store in an airtight container in the freezer for up to 2 months. 

 

Simple Swaps for Every Adventurer 

  • Gluten-free? Swap oats for raw buckwheat groats. 
  • Switch seeds for nuts like almonds or cashews. 
  • Try dried apricots, prunes, or figs instead of dates. 
  • Use your favourite nut butter or chocolate. 
  • Skip the chocolate or drizzle melted chocolate over the top for a decadent finish.
